-2 Tablespoons of Olive oil
-1 Small Onion
-3 Cloved of Minced Garlic
-1 Tablespoon of Ginger
-1 Jar of Red Curry Paste
-1 can of Coconut Milk
-2 Zucchinis, Diced
-1/2 a Head of cauliflower, pulled apart into bit size pieces
-2 Cans of Chick Peas
-3 Handfuls of Spinach
-2 Tablespoons of Soy Sauce
-1/3 cup of Cilantro
1.In a large pot over medium heat, add in the oil and chipped onion. Stir with a wooden spoon until the onions have browned
2.Next, add in the garlic, ginger and red curry paste. Make sure you get everything well stirred.
3.Stir in the coconut milk, making sure you are scraping everything off the bottom of the pot.
4. Add in the diced zucchini and cauliflower. Put the lid on the pot and allow to cook for about 5 minutes.
5.Now, add in the drained chick peas and spinach. Cover again for about 2 minutes.
6. Stir in the Soy Sauce and Cilantro.
7. Enjoy over Rice!
